1-2 chicken breasts (depending on size)
1 kielbasa sausage
1/2 yellow onion
1 bell pepper (I use green)
Minced garlic
1 can fire roasted diced tomatoes
1 cup jasmine rice
1 cup chicken broth
Cajun seasoning
Drizzle olive oil in a large sauce pan, add your desired amount of garlic, along with diced onion and bell pepper.
Cube chicken, and cut up sausage. Put in pan with onions and peppers
Cook until chicken is ALMOST cooked through & add rice (the chicken finishes cooking while the rice is cooking in it later on).
Stir around and add a little Cajun seasoning.
After a minute or two, add the can of tomatoes and chicken broth.
Stir and bring to boil. Once boiling, lower heat to simmer and cover.
Simmer for 18-20 minutes (or until rice is done), stirring occasionally to make sure the rice doesn't burn on the bottom.
Add more Cajun seasoning if needed!
Tyler's variation(s) When I make this, I add a ton of extra rice and extra liquid to make it a bigger meal on the cheap. Also have cooked the Jambalaya alone and done rice in the rice cooker and combined afterwards. Also have left out the chicken without adverse side-effects. I also tend to use a full yellow onion instead of a half. If you can't tell, I make this an awful lot. I've also taken to making this jerk seasoning instead of Cajun seasoning because I like the flavor better: https://www.chilipeppermadness.com/chili-pepper-recipes/spice-blends/homemade-jamaican-jerk-seasoning/. I have to leave out the "fun" spices (cayenne pepper, hot pepper flakes) because SOME people can't eat it, but it's still got a really great flavor anyway!
