½ c butter, softened
1 c sugar
2 eggs, slightly beaten
½ t salt
1 t baking powder
½ c milk
1 ⅔ c sifted flour
½ c nuts, chopped
1 lemon, finely grated rind only
Glaze:
¼ c sugar
1 lemon, juiced
Cream the butter and sugar.
Add in eggs and continue beating.
Mix in the salt and baking powder until well blended.
Add in milk. Blend.
Blend in flour until well mixed. Add nuts and lemon rind.
Bake at 350 degrees in a greased loaf pan for around 50 mins, depending on the size of your loaf pan.
After removing from oven, glaze with the sugar/lemon mixture.
