2 c sugar
1 c butter
4 bananas, well ripened
4 eggs
1 ½ c flour
1 t salt
2 T baking soda
Preheat oven to 350 degrees.
In a large bowl, cream together the sugar and butter until light and fluffy.
Mash the bananas and add them to the mix.
Beat the eggs well, and then mix well into banana batter.
In a separate bowl, sift together the flour, salt, and baking soda. Add to the banana mixture and blend well.
Pour into 2 greased and floured 9x5 bread loaf pans.
Bake at 350 degrees for approx. 45 mins, or until done.
Cool in the pans for 5 mins and then turn out to cool completely on a rack.
Cool completely before slicing, this freezes well and is tasty served toasted.
