1 c flour
¾ c sugar
½ t baking powder
½ t salt
¼ t soda
¾ t cinnamon
¼ t cloves
¼ t Allspice
¼ c shortening
⅓ c mashed ripe banana (small)
1 unbeaten egg
¼ c milk
⅓ c pecans, chopped
Frosting:
2 T melted butter
1 T hot water
2 t lemon juice
Sift together flour, sugar, baking powder, salt, soda, cinnamon, cloves, and Allspice.
Combine shortening and banana.
Beat for 2 minutes then add egg. Beat well.
Blend in dry ingredients, alternately with milk.
Blend thoroughly after each addition.
Stir in pecans.
Spread in a well-greased 13x9 pan.
Bake at 350 for 22-25 mins.
While warm, frost with lemon frosting.
Frosting:
Combine butter, water, and lemon juice.
Blend in confectioners’ sugar.
Thin with hot water if necessary.
