2 oz cooked chicken
¼ cup cooked brown rice
1 slice cooked turkey bacon
2 T onion, chopped
2 T fresh parsley and cilantro
1 egg
3 egg whites
2 T salsa
1 cup spinach (chopped)
Spray frying pan with non-stick spray
Sauté chicken, brown rice, spinach, bacon, onion, parsley, and cilantro.
Blend eggs and pour over the top.
Cook omelet style.
Top with salsa.
